Brewing
Café-style filter coffee: the brewing guide
What you need
A porcelain or glass dripper and matching filter paper
15 g freshly ground coffee (medium, like coarse sand)
250 ml water at 92–96 °C
scales and a little patience
Step by step
Put in the paper and rinse it with hot water – this removes the paper taste and warms dripper and cup.
Add the coffee, pour twice its weight in water and let it bloom for 30 seconds.
Pour the rest of the water in small circles. Total brewing time is three to four minutes.
If it does not taste right
Sour and thin? Grind finer. Bitter and dry? Grind coarser. Only ever change one thing at a time.
Tip
From the roastery
Weigh instead of guessing: 60 g of coffee per litre of water is almost always right.
