Brewing
How to dial in your espresso
A good espresso comes down to three settings: grind, dose and brew time. As a starting point we recommend 18 g of coffee in a double basket, giving 36 g of espresso in 25 to 30 seconds.
Grind
If the shot runs too fast and tastes sour, grind finer. If it barely drips and tastes bitter, grind coarser.
Dose
More coffee brings more body but needs more time. Never change the dose by more than half a gram.
Temperature and freshness
93 °C is a good value. And beans are at their best five to thirty days after roasting.
Tip
From the roastery
Write down dose, yield and time. After three shots you will know which way to go.
